Yummy Zucchini Bread

From the First Laidy...

An amazing client and friend brought in some Lemon bread for Ryan and me the other day!  And it was amazing!! So this weekend (actually it was a month ago but we forgot to post this) we were having brunch at our house and I decided to make something similar to hers but with zucchini!

Here’s what we used:
7 eggs
1 tablespoon cinnamon
3/4 cup coconut flour ( found it at whole foods)
2 medium-large fresh garden zucchinis shredded and drained
1 tsp salt
1 tsp vanilla
1/3 cup honey
1/4 cup coconut oil (melt)
1 tsp baking soda

Mix everything together into a bowl and put it into a loaf pan.  I popped it in the oven at 350 for about 35-45 mins (I think I got distracted by my super cute nephew so this is what I am thinking)! When you check it to make sure its cooked all the way through make sure you can stick the toothpick all the way to the bottom because with the amount of eggs that are in there its tough to tell if its fully cooked! Ours was just a little under-cooked so it could have used another 5 minutes but we didn’t really care because it was so good!  Hope you enjoy!
